Turkey

I’ve already cheated. I enjoyed an early Thanksgiving feast at one of my favorite restaurants, I just could not wait. If you love turkey so much that you also find yourself cheating, or not complaining about generous amounts of Thanksgiving left overs, this post is for you!
What’s Thanksgiving without a turkey? Phowley’s written up everything we need to know about how to make a turkey, and cook it for the right amount of time! This is a great recipe for beginners, or if you need a bit of guidance after the big bird’s defrosted. Check out Phowley’s Blast Furnace-Roasted Turkey Recipe.
You’ll want to pack these for a great at-work lunch. They’ll fill you up and fill the office with the sweet aroma of Thanksgiving. If you’re worried about eating that extra slice of pie — don’t! Why? Because you’ll be enjoying devonrexkitty’s light Cool Turkey Pitas the next day. For a hot lunch, try Belinda’s Turkey Oven Sandwich.
What if you don’t want to wait for Thanksgiving leftovers. Go ahead and celebrate early with boanja’s Turkey Roast with Garden Vegetables, we won’t tell ;). Her recipe calls for a 2-3 pound turkey, perfect size for a hungry family or group of friends. If you’re cooking for two, you’ll probably have leftovers. But we like that, and we like that roscarson shared Jamie Oliver’s Turkey and Sweet Leek Pie recipe with us — great way to use the leftovers.
Here’s a tip: if you want to save a little money this holiday season but still want to savor the delicious taste of a freshly roasted turkey, go for just the turkey breast. Seal in the flavor and moisture by brushing the top layers with butter and baking the turkey an affordable oven bag!

Party Food: Appetizers

If it’s your turn to host the holiday party this year, but you can’t decide what to serve and you’re on a budget… this is what you do (no, don’t order out or buy the veggie platter at the grocery store ;), serve a variety of appetizers! We’re not doing ranch dip and carrots this year… take it up a few notches with these flavorful bites.
Serving appetizers is a great way to feed a crowd because, with so many options, even the pickiest eaters will find their favorite platter. For the bean dip lovers, make Bette_0713’s Mexican Crockpot appetizer. You’d never guess this is an appetizer, it’s hearty and… you don’t have to cook it! Let the crockpot do the hard work.
I’ve never met a caramelized onion recipe I didn’t love, this is why I’d go for Redking’s Gorgonzola and Caramelized Onion Appetizer. It’s sweet, savory and… best of all, can be made ahead of time. Great appetizer for an office party, too.
So we’ve got mexican food, let’s move on to something Italian. JaneTreva’s Baked Ravioli Appetizers with Dip comes with a dipping sauce that’s a bit unique, reminds me of an old favorite… think chips! Sour cream and onion combined with cheese… delicious! Mouths will water at the site of her ravioli appetizer.

Savory Pies!

Other than soups and stews, the one meal I really look forward to during the fall and winter months is a hearty pot pie with a great crust! There’s something about the crust… it has to be special, it can make or break the pot pie, I think! Even if you don’t have pastry crust in your freezer, there are still so many options when it comes to finishing off your savory pie!
For instance, Peach 106’s Beef Shepherd’s Pie with Garlic Mashed Potato Crust differs from most pies in that the crust isn’t made out of flour. Mashed potatoes make the perfect topping to this beefy meal; when the pie bakes up in the oven, the mashed potato crust becomes golden… extra delicious.
ChicagoErin20’s Chicken Pot Pie with Cornbread Crust is another keeper. Cornbread is always a tasty side, now it’s the crust! She includes the recipe for the cornbread, it’s a classic. If you’re on a gluten-free diet and want to enjoy a bread-based crust, use this recipe but substitute the flour for rice flour and add 1/4 teaspoon of xanthan gum — that’s it!
Now how about a pie with the crust on the bottom? What? Yeah, pizza of course! Atlantagirl1375’s Hamburger Pizza Pie is for fast food and comfort food lovers. If you don’t have time to whip up a pizza crust from scratch, think about grabbing a loaf of french bread after work… or use those english muffins that are about to go stale… or even bagels!
Make one of these pies for dinner tomorrow and you’ll probably be able to take a break Saturday, most of them yield a good amount of leftovers!

Beefy Stews

After you’ve put on your comfy clothes and turned on the heater after a busy day at work, you find that you’re still… hungry. Right! It’s time for dinner. The only thing you’ve got is beef. But don’t feel limited, warm up with one of these filling beef stews.
Krl10106’s Sweet and Sour Beef is perfect for when you really want something a little different. Like any other stew, you’ll find carrots and onions in here. But where does the sweet and sour flavor come from? Vinegar and brown sugar, the secret ingredients.
For something a little more traditional, try Bsherrill’s Beef Stew with Bacon, Mushrooms and Pearl Onions. She serves this over mashed potatoes. This is the kind of stew you can serve to dinner guests.
Cartaphilus’ Winter Beef Stew is another classic. This family friendly meal includes one of my favorite ingredients, bacon! You can count on that and the Italian Dressing to liven up the flavor. I have a feeling you can even throw this in the slow-cooker… that’s the beauty of a good stew, it’ll practically make itself :)!

Trick o’ Treaters can be pretty picky when it comes to Halloween candy. I remember scoping out my neighborhood for the houses that gave away the biggest candy bars! I’m not a little kiddo any more, but I still like to indulge every once in awhile, without having to dress up. But since Halloween’s right around the corner, let’s talk about the sweet stuff that makes every dentist cringe: candy!
Mommy-at-home’s Double-Chocolate Candy Cashew Bars might resemble what you might find in the candy aisle, but they’re a little different. These homemade chocolate bars have simple, classic ingredients, all of which you can pronounce. No funny business going on here, this is a real treat!

Warm Muffins

Sometimes a family breakfast isn’t possible on Saturday mornings. Either everyone’s sleeping in, recovering from the busy week, or you’re out the door earlier than usual… heading on a family trip or maybe a weekend game. So how do you get everyone out of bed and out the door on time? Bake a batch of warm muffins.

Tomatillos vs. Tomatoes

You see a green tomato-looking fruit and you think “fried green tomatoes,” but is a tomatillo really a tomato? You can say that a tomatillo is the tomato’s cousin. The tomatoes you usually eat fried are actually red tomatoes that haven’t fully ripened. You’ve probably had tomatillos in a salsa or in a batch of homemade enchiladas. Here are a few recipes that deliciously showcase tomatoes and tomatillos.
Tomatoes can be used in more than just sauces. For a new way to enjoy both tomatoes and eggplant, try Patricia_Scarpin’s Grilled Eggplant with Tomatoes and Cheese. Familiar ingredients usually used in Italian dishes get a recipe make-over with Patricia’s unique dish that includes capers and garlic.
Paul123’s also got an eye-catching recipe for Herb Stuffed Tomatoes that sounds like it’d be pretty tasty for dinner… I’m thinking Thanksgiving dinner with that herby stuffing.
ForkSpoonKnife’s Pepian Sauce Over Chicken is an elegant dish with a kick. She appreciates the tart flavors of the tomatillo and pairs it with spicy ingredients to make the sauce mouthwatering. Like all good sauces, this one’s completely homemade.
I’ve never seen tomatillos served up like this, so I have to say I’m impressed with bsherrill’s Cafe Rio Style Creamy Tomatillo Dressing. Make your salad even greener with her tangy ranch/lime/tomatillo dressing.
What would happen if we paired up tomatoes and tomatillos? Hopefully we’d end up with something as tasty as HungryGal’s Salsa with Tomatillos and Roasted Tomatoes. Though tomatillos are delicious, HungryGal says that if you really want to make your salsa special, add roasted tomatoes!

Tips and Tricks

How many of you have a whole chicken or even a few chicken breasts left over from dinner earlier this week? I know I do.
After you’ve made all the chicken quesadillas you can stomach and made enough chicken salad to last you til next summer, what do you do? Joanne and Adam from Inspired Taste say you should make a pot of good ol’ chicken noodle soup! I have to agree.
I’d say they’re even experts when it comes to the topic of chicken soup, you can count on them to offer tips on making your bowl extra delicious. For instance, I’ve never thought about adding mashed potatoes to the broth! And here I am adding flour to thicken my broths, it’s time for a change! Leftover Chicken Noodle Soup
Since its just the two of us, Adam and I almost always have leftovers. We used to be so terrible about using them up, but are getting better and actually have found that sometimes what you make with the leftovers turn out to be tastier than the original meal anyway. Here are some tips for great leftover chicken soup.
* Depending on what you have in stock, create a base using an assortment of onions, garlic, celery and carrots. Cut the onions, celery and carrots into 1/2 inch dice for a heartier soup.
* As a basic process, saute your base vegetables for about 10 minutes to draw out the natural sugars, then add any dried herbs and seasonings along with the leftover chicken and finally add the chicken stock, I usually add 4 cups and simmer for about 20 minutes.
* Add some pasta, rice or uncooked potatoes to the soup for some heartiness, for 4 cups of chicken broth use about 1/2 - 3/4 cups of uncooked rice and pasta and 1 large uncooked potato cut into cubes. If you are using rice, add it at the same time as the chicken stock and simmer for 20 minutes. If you are adding pasta, add it 10 minutes before serving so the pasta does not get overcooked. For potatoes, add them 5 minutes into sauteing the base vegetables.
* Just before you add chicken stock add a mixture of dried herbs for extra depth of flavor, my favorites are to add one bay leaf and about a tablespoon of herbs de Provence per 4 cups of chicken stock
* Season all layers of the soup with salt and pepper to create a well-seasoned soup. While sauteing the base vegetables lightly season with salt and pepper, then after adding the chicken broth season to taste, this way the soup will be seasoned not salty. By adding salt at the beginning of the process, you are able to draw out the natural sweetness of the base vegetables, adding more flavor to the soup. If you only add salt at the end, it is very easy to find yourself with a salty soup.
* If you have it in stock, add one can of diced tomatoes for a richer broth or a can of beans, just make sure you rinse the beans before adding them to the soup.
* If you have some to use up, add leftover mashed potatoes to the broth to make a thicker soup.
* For a creamier and luscious soup you could add about 1/4 cup of milk or half and half. This also rounds out the flavors nicely.Leftover Chicken Soup
1 tablespoon olive oil
3 carrots
1 medium onion
3 celery stalks
1 garlic clove, minced
1 cup leftover chicken
1 tablespoon herds de Provence
1 bay leaf
4 cups low-sodium chicken stock
1 can diced tomatoes
3/4 cup uncooked pasta
salt and pepper
Dice the carrots, onion and celery into 1/2 inch dice. Add the olive oil and diced vegetables to a large soup pot over medium heat, lightly sprinkle with salt and pepper (about 1/2 teaspoon of salt and 1/4 teaspoon pepper), then saute for 5 minutes. After 5 minutes, add the minced garlic then saute for another 5 minutes.
Add the herbs de Provence and chicken to the vegetables then saute for another minute. Add the bay leaf, chicken stock and tomatoes then bring the soup to a boil, reduce heat and allow to simmer for 10 minutes, then season to taste.
After 10 minutes, add the pasta and continue to simmer for an additional 10 minutes or until the pasta and vegetables are cooked.

I know this isn’t the first peanut butter post we’ve blogged, but can you ever get too much of the good stuff that gets stuck to the roof of your mouth? Pour yourself an ice cold glass of milk because you’re going to need it to wash down every one of these nutty recipes.
Peanut butter isn’t just for crackers and sandwiches these days. UrbCindy’s Chocolate Peanut Butter Popsicles just might be the thing you crave if warm summer weather’s stickin’ around your neck of the woods.
I also like how mytastytreasures creatively uses peanut butter to make frosting for her Chocolate Sheet Cake with Peanut Butter Frosting. Think of a favorite chocolate candy bar, but in cake form. Yummm!

Meatloaf

Now, I know that a blimp-shaped lump of ground meat doesn’t necessarily look appealing, but I’ve got to admit… I love meatloaf. Crazy is what some may call me. But it’s one of the most versatile foods, really! You can make everything from burritos to sandwiches with it, and you can stuff a meatloaf with pretty much anything, read on for more ideas.
Rejadez Spinach and Feta Meatloaf looks amazing. It’s been stuffed with some tasty ingredients, and it certainly looks like more than just a lump o’ ground hamburger meat ;)! That’s because it’s got everything from carrots and onions to… spinach and feta!
How about some fusion cooking. Who knew you could incorporate asian flavors into a meat loaf recipe? Lynchris does it with her Sweet and Sour Meatloaf. Instead of serving a meatloaf with plain ol’ ketchup, whip up some of her tart and savory sweet and sour sauce.
