In my kitchen, sanity is non-existent, so I guess it’s safe to say that I’ve already gone nuts. But after checking out these recipes, I have a feeling you’ll go a little nuts too, but in a good way :).
The great thing about nuts is that they’re perfect in any dish, from the sweet to the savory. They’ll add texture to your salad and aesthetic appeal to your fancy desserts… or even veggie side dishes. Need a way to get the family to eat more greens? InspiredBites Spinach with Raisins and Pine Nuts will do the trick. I’ve made an adapted version of this recipe and enjoyed it.
Fall is in the air and pretty soon we’ll even be roasting chestnuts. But here’s a nice summer/fall transition recipe, Carla’s Spiced Nuts with Sugared Bacon is the treat to serve as an appetizer for your dinner guests. You could even take these to the ball game, forget the peanuts and Cracker Jacks!

Plate free sweet and savory foods

I have a silly confession to make. Sometimes I purposely serve my dinner on a dessert plate because it makes me feel like I’m dirtying less dishes that way. This makes no sense whatsoever! I have one more confession, this one’s a common complaint, though: I hate doing dishes! I don’t mind the cooking, but dishes are another story.
Let’s forget about ‘em today. You won’t need plates for these recipes, after all. Serve ‘em up on a stick, everyone grab a napkin and we’re good to go. Let’s start off with something savory and summery. Stuart’s Tandoori Shrimp Skewers with Pineapple Chutney is the ideal fresh and light meal.
Srbeak’s Grilled Swordfish on Rosemary Skewers recipe offers a clever way to avoid getting stuck behind the sink, use herbs instead of a skewer! Not only do the rosemary skewers make life a little easier, they also make the food more flavorful.

As American as Apple Pie!

There’s a reason why apples are the stereotypical gift teachers receive on the first day of school. Though you probably already know the reason why, I have to admit that it took me awhile to figure it out ;). Apples are in season during the fall months! Ok, so I’m obviously no Sherlock, but I do have a pretty good tip to offer. Instead of handing your teacher an apple, go the extra mile and bake her an apple pie! Not just any ol’ apple pie will do, though. She is the one grading your exams for the next year, after all! :)
Speaking of going the extra mile, you’d think holschuh_anna’s Super Apple Pie is a mile high! It’s huge. This is a pie that’s okay to super-size, because an apple a day does keep the doctor away and this recipe calls for about 3 pounds of ‘em!
So maybe carrying a big apple pie to class isn’t easy. But it will be if you take Melissawelch’s Apple Pie in a Jar . Pretty clever, don’t you think? If you like spiced apples, then you’ll love Melissa’s recipe. Tastes just like fall!
Momofsixplus1 knows how to do a good lunch. Teachers are not meant to eat cafeteria food! Treat her to something special and savory, make her Momofsixplus1’s Chicken Apple Burgers. You know what I love about this? It reminds me of Thanksgiving. Apples make it delicious but the cranberry sauce makes it extra special. Momofsixplus1 gets an A for her recipe and your teacher will agree :)!

Want to know something? I prepared that dish in under half an hour! If you missed yesterday’s post, where I discussed Dr_Mom’s Moroccan Chicken with Green Olives and Lemons, then it’s a good thing you stopped by today. Everything I said about the recipe yesterday still holds true today: the aroma of this dish is heavenly!
If you don’t have time to stand in front of the stove all evening, think about preparing the sauce in advance then cooking the chicken in the crock pot with the sauce a little later. I was curious to see how the dish would come out if I baked it. So that’s exactly what I did. I snapped the photo before popping the cast iron pan in the oven, then I covered it with foil and baked it at 350 for about an hour and 15 minutes.
What else did I do differently? Not much, because this recipe works as is. I did add a little bit of honey and also thickened the sauce by reducing it and adding a bit of potato flour. The end result? A slightly sweet and savory dish with so much flavor, you can serve it over a bed of plain white rice and still feel like you’re enjoying a fancy meal… without the headache of having to prepare a complicated recipe. Simple and delicious!

Though I can’t imagine a world without olives, I don’t know that I’d actually want to try one straight off the tree. The truth is, olives taste pretty bad in their rawest form. Believe it or not, this is why they’re soaked in lye and washed thoroughly — to remove the strong, unappealing bitter taste.
But let’s not focus on the olive’s bitter past :P, let’s talk about how olives add such delicious flavor to some of our favorite foods, like bread. You’ll never want to eat plain white bread after you take a look at Vals Kalmata Olive Bread with Oregano. You know those breadsticks from your favorite restaurant? They pale in comparison to this recipe.
Susie87’s got a nice vegetarian meal or side dish. Her Chickpea Saute with Garlic and Olives proves that you can make a quick, nutritious meal in minutes, without having to sacrifice taste or blow your budget.
Olives and cheese are the perfect couple, right? In CynMaria’s Quick Feta and Olive Spread, they’re looking tastier than ever. Why’s that? Because they’re allowed to shine, the other ingredients, like lemon juice and oregano, only enhance their flavor.

Back to school lunch!

Flavorful tofu meals

You promised the family you’d make one vegetarian meal a week. You’re actually excited at the grocery store when you’re staring at the square plastic-wrapped container of the white jiggly stuff. Oh, the possibilities! you say to yourself. You then take the jiggly protein-rich substance home. You open it up. And then?! And then?! Oh the suspense… All inspiration suddenly leaves along with your appetite: What the heck do you make with this stuff!
Never fear! Delicious flavorful tofu meals are right here, on Key Ingredient! No more staring at the white stuff in fear, it’s not just stuff… it’s quite an amazing ingredient, if you know how to use it right! Susie87 knows how to, take a look at her Indian-Spiced Scrambled Tofu recipe. You’d never guess those aren’t scrambled eggs!
And who says tofu is only tasty in stir-frys? Try it in something a little different, like IFoundHappy’s Tofu Parmesan, breaded, cheesy and delicious… you definitely won’t miss the meat sauce when you’re eating this for dinner.

The Wonders of Corn

Oh no! What am I doing talking about corn when everyone’s saying there’s already too much of it in the food we eat?!
Nooo, what kind of message is she sending!
Is that what you’re thinking ;)? Well, I’m here to present corn in a positive light. You want to know the truth? We can’t escape corn, it’s in so many delicious recipes and guess what? It can be healthy, especially when it’s ground.
But first I want to talk about one of our favorite not-so-healthy but definitely tasty ways to enjoy corn! Popped and delicious, made in your microwave… it’s Elle’s Microwave Popcorn. She says it’s addictive, this will disappear in a flash!
How about cornbread? I can never get enough of it; you’ll want to try Bodanzarama’s Roasted Chipotle Cornbread. Not only is it good but it’s also very good for you. Made with whole wheat flour, yogurt and some fragrant spices, you’ll want to gobble it up with anything from a light salad to a steak!
Have you ever tried polenta? You can pretty much flavor it with whatever you like, it’s that versatile. If you’ve never tried it before, I recommend making Junodemelo’s Easy Oven Baked Polenta. Why? It is a pretty darn easy recipe and serves as a great template for starters. If you want to spice it up, add a few peppers sauteed with caramelized onions, then add some sundried tomatoes… then sprinkle in a little cheese. The possibilities are endless!

Sweet Rolls

What’s sweet warm and carby all over? A perfectly served homemade roll. Whether it’s a cinnamon roll, yeast roll or even a pancake roll (read on to find out what that is :), we’ve got you covered… and soon you’ll be covered in flour after reading these recipes, because who wouldn’t want to bake up a batch?
Ok, so I’m throwing you a curve ball. I mentioned pancake rolls, now I’ve got to tell you what they are. Well, they’re not your everyday fluffy roll but they’re certainly still delicious. They caught my eye and now I’ve got to share Pixen’s Pine N Coconut Pancake Rolls. She says they taste great with tea or coffee, but I could eat them alone.
Pennyfl2911’s Homemade Cinnamon Rolls are a real masterpiece! She says she’s worked on this recipe for about 12 years and now she’s famous for making mouthwatering cinnamon rolls.
Patricia’s Cardamom Coffee Rolls are almost too pretty to eat. Key word here is almost! Oh, I can smell these already, just by looking at the photo.
Speaking of rolls… I have a feeling I’m gonna be rolling out of the house tomorrow, because after staring at these recipes, I’m gonna have to make my own batch and I certainly won’t be eating just one :).
