You probably didn’t grow up eating these casserole dishes we’re about to share with you. They’re not just cheesy or full of noodles. Instead, they combine unique ingredients in a fresh way. Even the non-casserole eating member of the family will approve of these recipes.

Episcopo’s Mousakka is an Eggplant and Lamb Casserole. When you want a little something different than your everyday casserole, this is the meal to make. Grown ups will approve of the lamb meat sauce, spiced with nutmeg and oregano; kids will like the cream sauce that’s made with cottage and kasseri cheese.

Kwatson’s Zucchini Cornbread Casserole isn’t just a casserole. She says it can also be called a bread recipe, and maybe we can even call it a savory bread pudding. Kwatson’s casserole will definitely appeal to picky eaters; if you couldn’t get them to eat zucchini before, you’ll be surprised to see that they’ll eat it like this.
