Snowdrops

Recipes laced with memories taste the best! Snowdrops are Rachel’s favorite holiday cookie, not just because they are so light and delicious, but because with each sweet bite the memory of her sweet Nana comes flooding to her mind. Rachel’s Nana made these snowdrop cookies every holiday, so she was excited to keep the tradition going with her own family. But, Rachel and her family’s gluten and dairy free diet threw in a few baking challenges. She found it almost impossible to find dairy-free mini chocolate chips, but finally discovered an allergy friendly supplier called Enjoy Life.
Rachel doesn’t claim to be an expert baker, but she writes that these meringue cookies are foolproof! Even readers of Rachel’s Recipe Box give testament to this simple recipe raving, “I’ve never made meringue before, and these turned out great!”
