Cold weather puts us all in the mood for something warm and delicious. A cup of hot cocoa does the trick temporarily; it warms us up and holds us over until dinner. But what do you do when the cocoa’s worn off and it’s still so cold that peeking into the refrigerator to see what’s available to eat is actually painful! On those days, all you want to do is hibernate, but then the hunger pains kick in and you remember that you’re not a bear! :)

The perfect solution to your dilemma? Alecia’s Veggie Stew in Baked Kabocha Squash. As soon as you turn on the oven to bake the squash, you’ll be able to feel your fingers again :). Once you warm up, all you’ll have to do is cut up a few vegetables, roast them, then allow the veggies to simmer on the stove in vegetable stock.
