Mango Coconut Burfi

Inspired by one of her favorite childhood snacks, Supriya from Red Chillies, created a recipe for Mango Coconut Burfi. As a child, it was sweet and ripe mangoes that she looked forward to enjoying on a warm summer day in India. The memory of the delicious fruit conjured up a craving in Supriya, but she would have to find a way to satisfy that craving creatively, since mangoes weren’t available at the grocery store when she needed them.

Supriya did come across mango pulp, though, and she was able to use it to her advantage. Combining it with coconut and milk was an ingenious idea, since it allowed her to put a creamy and decadent Mango Coconut Burfi together. It also gave the burfi a unique texture; Supriya explains that the mango pulp provides added moisture, which keeps the burfi from hardening.

Supriya’s Mango Coconut Burfi is a sweet dessert that you’ll enjoy making; the toasted coconut will give off a heavenly fragrance! Supriya suggests tossing in a few raisins or cashews for added flavor. The leftovers can even be used to make laddos, another tasty dessert!
