A few weeks ago I was watching a barbecue contest on the Food Network and was surprised to see the amount of passion these men put into their trade; grown men cheering each other on and weeping over their victories. It was strangely exciting to watch. While I don’t think Mr. Orph is weeping over his grill, he definitely puts the same amount of passion into his food.

His process for barbecuing is detailed, precise, and….well, laid back. After carefully preparing the meat and perfectly situating it onto the grill Mr. Orph abandons his baby (back ribs) to the care of the pit’s smoke and retires to the comfort of his house for a relaxing afternoon of cold drinks and summer laze. Every hour or so he checks on the process and mops the meat to maintain its moistness. I wont say that these ribs look tender and juicy enough to “fall off the bone” because that does not fit into the philosophy of Mr. Orph’s Kitchen. I will instead say that Mr. Orph has produced a juicy, succulent, tasty rib and a worthy contender at any Food Network barbecue contest.
