Chicken-Grape Salad & Gruyere Panini

No time to cook? Fridge full of left-overs? I have one word for you…. Panini! Don’t snob the sandwich, this is gourmet! Think luscious green grapes, moist chicken, crunchy walnuts, melted gruyere cheese, and crunchy dark rye bread. Yum… my mouth is watering!
Kathy, from Panini Happy, has created some of the most delicious and gourmet-sounding paninis I have ever heard of! I was first introduced to paninis a few years ago when I visited Panera Bread; it has since become one of my favorite restaurants. Once you get the knack for stacking up the perfect panini the possibilities are endless. Kathy has created some of the most interesting paninis I have seen: Grilled Peaches & Humboldt Fog, Chocolate Chip Cookies & Ice Cream, and Smoked Salmon Bagel. This is a sandwich revolution!
