One of the best secret ingredients in a sweet recipe is coffee. It adds depth to chocolate desserts and enhances the flavor of any baked good. I’ve used coffee in my own recipes, so I know from experience that Eunice’s Coffee and White Chocolate Chip Muffins have to be good.

If you’re a fan of warm chocolate chip cookies (and who isn’t?!), then you’ll easily get addicted to Eunice’s muffin. Who can say no to a buttery treat? Her adapted recipe calls for ingredients that are similar to those in a chocolate chip cookie recipe, but she livens up the flavor by adding a few teaspoons of instant coffee.

In her blog Lemon Almond, Eunice talks about how much she loves ‘the crusty top and soft middle’. Bake these muffins for only 25 minutes, and they’re good to go…and I guarantee they’ll go quickly!
