This week at Key Ingredient, Kat decided to create a healthy recipe that was inspired by Fish Veracruz. Though this dish is packed with protein, she claims that the fish and lentils are light in texture. In addition to the aromatic capers and diced tomatoes, the sautéed onions and mildly spicy peppers bring fresh flavor to this dish. Kat claims it’s savory and easy to prepare, so this would be a great meal to serve on a Friday evening spent cooking with family or friends. Instead of going out to eat tomorrow evening, why not begin your weekend on a healthy note with Kat’s Tilapia with Lentils, Tomatoes, and Capers?



If you’re interested in experimenting with a similar recipe the way Kat did, try using Pennyfl2911’s posted recipe for Tilapia Veracruz. Ingredients like jalapeños and sweet bell peppers give her dish a hint of Latin flair while adding color and spice. Squeeze a bit of lemon juice on top of the fish for extra flavor, and you might even get inspired to add a few more unique ingredients to the recipe as you make it your own.
